Caramelized Pear Dutch Baby

Ingredients

  • 3 large eggs
  • ¾ cup all-purpose flour
  • 2 Tbsp granulated sugar
  • 1 vanilla bean, split and seeds scraped
  • ¼ tsp ground cinnamon
  • ⅛ tsp grated nutmeg
  • ¾ cup milk
  • 5 Tbsp butter, cubed, divided
  • 2 pears, cored and thinly sliced
  • ¼ cup packed brown sugar
  • 1 cinnamon stick
  • Whipped cream (optional)

Instructions

  1. Place a 10-inch cast-iron skillet on middle oven rack; preheat oven to 425°F.
  2. Whisk eggs in a large mixing bowl until pale and fluffy, about 1 minute. Add flour, sugar, vanilla bean seeds, cinnamon, and nutmeg, whisking to combine; slowly whisk in milk until no lumps remain.
  3. Add 2 Tbsp butter to preheated skillet; return to oven until butter is melted and bubbly, about 3 minutes.
  4. Carefully remove skillet from oven; pour batter over sizzling butter. Immediately return skillet to oven.
  5. Bake 25 to 30 minutes or until puffed and golden brown.
  6. Meanwhile, melt 3 Tbsp butter in another skillet. Add pears, brown sugar, vanilla bean pod, and cinnamon stick. Cook, stirring often, until pears are softened and golden. Discard vanilla bean pod and cinnamon stick.
  7. Serve pears over Dutch baby. Top with whipped cream, if desired.
