Roast Beef Baguettes
Orange-Avocado SaladIngredients
- 5 radishes, thinly sliced
- ¼ cup reduced-fat sour cream
- ¼ tsp white wine vinegar
- ¼ tsp salt
- ½ tsp pepper
- 2 dashes of hot sauce
- 1 cup spring mix
- 1 (8-oz) multigrain French baguette, split horizontally
- ½ lb thin deli-sliced roast beef
Instructions
- Toss together radishes, sour cream, vinegar, salt, pepper, and hot sauce in a bowl.
- Arrange spring mix on bottom half of baguette. Top with roast beef and radish salad.
- Cut into 4 equal portions, and wrap tightly in plastic wrap or foil.
Side Dish Ingredients
- 1 Tbsp lemon juice
- 1 Tbsp extra virgin olive oil
- ¼ tsp salt
- 3 navel oranges, peeled and sectioned
- 1 small avocado, diced
Side Dish Instructions
- Whisk together lemon juice, oil, and salt in a serving bowl. Add oranges; toss well.
- Stir in avocado just before serving.
