Hawaiian French Bread Pizzas

Ingredients

  • ½ cup organic pizza sauce
  • ½ (16-oz) loaf organic French bread, halved lengthwise
  • ½ (10-oz) pkg barbecue jackfruit
  • ½ (8-oz) can pineapple tidbits, well drained
  • ½ green bell pepper, sliced
  • ¼ cup sliced red onion
  • ½ (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 450°F. Spread pizza sauce on cut sides of bread. Top with jackfruit, pineapple, bell pepper, onion, and cheese.
  2. Place on a baking sheet. Bake 15 minutes or until cheese is melted and bread is toasted. Cut into slices.

Side Dish Ingredients

  • 1 (9-oz) pkg romaine salad
  • ¼ cup chopped macadamia nuts
  • ¼ cup vegan olive oil vinaigrette

Side Dish Instructions

  1. Combine salad and nuts in a large bowl. Drizzle with vinaigrette; toss.
