Balsamic London Broil

Thyme-Sweet Potato "Noodles"

Ingredients

  • 2 sweet onions, thinly sliced
  • 2 lb London broil
  • ¼ cup balsamic vinegar
  • 2 Tbsp coconut aminos
  • 2 Tbsp whole-grain mustard
  • 4 cloves garlic, minced
  • 2 tsp pepper
  • 3 sprigs fresh rosemary

Instructions

  1. Place onions in a 5- or 6-quart slow cooker. Top with beef, vinegar, coconut aminos, mustard, garlic, pepper, and rosemary.
  2. Cover and cook on LOW 8 hours or until beef is very tender. Cool slightly; slice or shred beef.

Side Dish Ingredients

  • 4 sweet potatoes
  • 2 Tbsp ghee
  • 1 Tbsp chopped fresh thyme

Side Dish Instructions

  1. Cut potatoes into noodles using a spiralizer, or use a vegetable peeler to shave potatoes into long thin ribbons.
  2. Melt ghee in a large nonstick skillet; add potatoes, in batches, and cook 4 to 5 minutes per batch or until tender. Sprinkle with thyme; season with salt and pepper to taste.
