Wasa Multigrain Crispbread
Ingredients
- ½ onion, chopped
- ¾ lb lean ground beef
- 1 Tbsp olive oil
- ½ Tbsp chili powder
- ½ tsp ground cumin
- 1 (14.5-oz) can low-sodium beef broth
- ½ (14.5-oz) can diced tomatoes with green chiles
- ½ (15-oz) can no-salt-added kidney beans, drained and rinsed
- ¾ cup frozen whole kernel corn
- 2 green onions, sliced
Instructions
- Cook onion and beef in hot oil in a Dutch oven over medium-high heat 5 minutes or until onion is tender and beef is browned and crumbly; stir in chili powder and cumin. Cook 1 minute.
- Add broth and tomatoes. Bring to a boil; add beans and corn. Cook 5 minutes or until thoroughly heated; top each serving with onions.
Side Dish Ingredients
- 1 (5-oz) pkg mixed salad greens
- 1 small cucumber, chopped
- ½ cup halved grape tomatoes
- 3 Tbsp refrigerated yogurt Ranch dressing
- ⅛ tsp pepper
Side Dish Instructions
- Combine greens, cucumber, and tomatoes in a large salad bowl. Drizzle with dressing, and sprinkle with pepper; toss to coat.
