Ingredients

  • 2 (12-oz) pkg frozen diced sweet potatoes
  • 1 lb plant-based ground beef
  • 3 cloves garlic, minced
  • 2 tsp Southwest seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp canola oil
  • 6 Roma tomatoes, chopped
  • 3 small avocados, chopped
  • ⅓ cup chopped fresh cilantro (optional)

Instructions

  1. Microwave sweet potatoes according to package directions.
  2. Meanwhile, cook plant-based beef, garlic, Southwest seasoning, salt, and pepper in hot oil in a large skillet over medium-high heat 8 minutes or until plant-based beef is browned and crumbly.
  3. Add potatoes to skillet; cook until thoroughly heated. Top with tomatoes, avocados, and, if desired, cilantro.
