Southwest Skillet
Ingredients
- 2 (12-oz) pkg frozen diced sweet potatoes
- 1 lb plant-based ground beef
- 3 cloves garlic, minced
- 2 tsp Southwest seasoning
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp canola oil
- 6 Roma tomatoes, chopped
- 3 small avocados, chopped
- ⅓ cup chopped fresh cilantro (optional)
Instructions
- Microwave sweet potatoes according to package directions.
- Meanwhile, cook plant-based beef, garlic, Southwest seasoning, salt, and pepper in hot oil in a large skillet over medium-high heat 8 minutes or until plant-based beef is browned and crumbly.
- Add potatoes to skillet; cook until thoroughly heated. Top with tomatoes, avocados, and, if desired, cilantro.
