Chicken Meatball Subs

Ingredients

  • ¼ cup diced onion
  • 1 tsp olive oil
  • ½ lb ground chicken
  • ½ cup panko breadcrumbs
  • 2 tsp minced garlic
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 large egg yolk
  • 2 hoagie or sub rolls
  • ¾ cup marinara sauce
  • ⅔ cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Cook onion in hot oil in a skillet over medium-high heat 5 minutes or until tender.
  2. Gently mix together onion, chicken, panko, garlic, salt, pepper, and egg yolk in a bowl using your hands.
  3. Roll chicken mixture into 1½-inch balls. Place on a greased rimmed baking sheet. Bake 15 minutes or until no longer pink in center, shaking pan after 5 minutes.
  4. Preheat broiler. Place rolls on a baking sheet. Divide meatballs among rolls; top with marinara, and sprinkle with cheese. Broil 2 minutes or until cheese melts.
