Chicken Meatball Subs

Ingredients
- ¼ cup diced onion
- 1 tsp olive oil
- ½ lb ground chicken
- ½ cup panko breadcrumbs
- 2 tsp minced garlic
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 large egg yolk
- 2 hoagie or sub rolls
- ¾ cup marinara sauce
- ⅔ cup shredded mozzarella cheese
Instructions
- Preheat oven to 425°F. Cook onion in hot oil in a skillet over medium-high heat 5 minutes or until tender.
- Gently mix together onion, chicken, panko, garlic, salt, pepper, and egg yolk in a bowl using your hands.
- Roll chicken mixture into 1½-inch balls. Place on a greased rimmed baking sheet. Bake 15 minutes or until no longer pink in center, shaking pan after 5 minutes.
- Preheat broiler. Place rolls on a baking sheet. Divide meatballs among rolls; top with marinara, and sprinkle with cheese. Broil 2 minutes or until cheese melts.
