Creamy French Onion Pasta

Ingredients

  • 4 oz fettuccine
  • 1 small onion, thinly sliced
  • 2 Tbsp olive oil, divided
  • 1 (8-oz) pkg sliced mushrooms
  • 1 Tbsp Worcestershire sauce
  • 2 tsp minced garlic
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup low-sodium chicken broth
  • ¼ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ¼ tsp dried thyme

Instructions

  1. Cook pasta according to package directions.
  2. Cook onion in 1 Tbsp hot oil in a skillet over medium heat 15 minutes or until tender and browned.
  3. Meanwhile, cook mushrooms in 1 Tbsp hot oil in a large skillet over medium-high heat 6 minutes or until browned. Reduce heat to medium; add Worcestershire, garlic, salt, and pepper. Cook 1 minute or until fragrant.
  4. Add broth, cream, cheese, and thyme; cook 5 minutes or until thickened. Add onions, stirring to coat. Serve onion mixture over pasta.

  • 3 cups spinach
  • 3 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together spinach and vinaigrette in a bowl.
