Cinnamon Roll Cake
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2½ tsp ground cinnamon, divided
- ½ cup plus 3 Tbsp butter, softened
- ⅔ cup granulated sugar
- 2 large eggs
- 1½ tsp vanilla extract, divided
- 1 cup unsweetened applesauce
- ½ cup plus 3 Tbsp milk, divided
- ¼ cup packed brown sugar
- ½ cup powdered sugar
Instructions
- Preheat oven to 350°F. Coat a 9-inch cake pan with cooking spray.
- Whisk together flour, baking powder, soda, salt, and ½ tsp cinnamon in a bowl.
- Beat ½ cup butter at medium-high speed with an electric mixer until smooth and creamy.
- Add granulated sugar, eggs, 1 tsp vanilla, and applesauce. Beat just until blended. Add flour mixture and ½ cup milk; beat well. Pour batter into prepared pan.
- Microwave 3 Tbsp butter 20 seconds or until melted. Add brown sugar and 2 tsp cinnamon.
- Transfer cinnamon mixture to a zip-top plastic bag with a small corner cut off. Pipe in a large spiral on batter.
- Bake 40 to 45 minutes or until golden brown and center is set. Cool in pan 5 to 10 minutes; remove from pan, and cool on a wire rack.
- Whisk together 3 Tbsp milk, ½ tsp vanilla, and powdered sugar. Drizzle icing over cake. Serve warm.
