Cinnamon Roll Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2½ tsp ground cinnamon, divided
  • ½ cup plus 3 Tbsp butter, softened
  • ⅔ cup granulated sugar
  • 2 large eggs
  • 1½ tsp vanilla extract, divided
  • 1 cup unsweetened applesauce
  • ½ cup plus 3 Tbsp milk, divided
  • ¼ cup packed brown sugar
  • ½ cup powdered sugar

Instructions

  1. Preheat oven to 350°F. Coat a 9-inch cake pan with cooking spray.
  2. Whisk together flour, baking powder, soda, salt, and ½ tsp cinnamon in a bowl.
  3. Beat ½ cup butter at medium-high speed with an electric mixer until smooth and creamy.
  4. Add granulated sugar, eggs, 1 tsp vanilla, and applesauce. Beat just until blended. Add flour mixture and ½ cup milk; beat well. Pour batter into prepared pan.
  5. Microwave 3 Tbsp butter 20 seconds or until melted. Add brown sugar and 2 tsp cinnamon.
  6. Transfer cinnamon mixture to a zip-top plastic bag with a small corner cut off. Pipe in a large spiral on batter.
  7. Bake 40 to 45 minutes or until golden brown and center is set. Cool in pan 5 to 10 minutes; remove from pan, and cool on a wire rack.
  8. Whisk together 3 Tbsp milk, ½ tsp vanilla, and powdered sugar. Drizzle icing over cake. Serve warm.
