Peanut Butter-Ganache Sandwich Cookies

Ingredients

  • ½ cup milk chocolate chips
  • ¼ cup heavy cream
  • ¼ cup butter, softened
  • ½ cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 Tbsp milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 12 large bakery peanut butter cookies (see Note)

Instructions

  1. Place chocolate in a heatproof bowl. Bring cream to a simmer in a small saucepan over medium heat; remove from heat, and immediately pour over chocolate.
  2. Let stand 5 minutes. Stir with a rubber spatula until chocolate is completely melted and ganache is smooth.
  3. Beat butter and peanut butter at medium speed with an electric mixer until smooth. Add sugar, milk, vanilla, and salt. Beat until blended.
  4. Spread ganache on 6 cookies; spread frosting on 6 cookies. Sandwich cookies together to serve.
