Oatmeal Creme Pies
Ingredients
- 1½ cups all-purpose flour
- ½ cup old-fashioned oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- 1 cup butter, softened, divided
- ½ cup packed brown sugar
- ½ cup granulated sugar
- 1 Tbsp molasses
- 1 egg, at room temperature
- 3 tsp vanilla extract, divided
- ¼ cup shortening
- 4 cups powdered sugar
- 2 Tbsp heavy cream
Instructions
- Preheat oven to 375°F. Line 2 baking sheets with parchment paper. Whisk flour, oats, baking soda, cinnamon, and salt in a large bowl.
- Beat ½ cup butter, sugars, and molasses with an electric mixer fitted with paddle attachment 3 minutes or until light and fluffy.
- Add egg and 1 tsp vanilla, beating until blended. Gradually add flour mixture, beating on low speed.
- Using a cookie scoop, drop dough by 2 tablespoonfuls 3 inches apart onto prepared baking sheets. Bake 10 to 12 minutes or until barely golden around edges. Cool completely on a wire rack.
- Meanwhile, beat ½ cup butter and shortening with electric mixer fitted with whisk attachment or using a hand mixer on high speed 1 minute or until light and fluffy.
- Gradually add 4 cups powdered sugar, beating until smooth. Add cream and 2 tsp vanilla. For each sandwich cookie, spread 1½ Tbsp prepared creme filling between 2 cookies.
