Ultimate Veggie Nachos
Ingredients
- 1 large red bell pepper, sliced
- ½ onion, sliced
- 1½ Tbsp olive oil
- 1½ tsp chili powder
- 1 tsp ground cumin
- 1 (15-oz) can low-sodium black beans, drained and rinsed
- ½ cup fresh pico de gallo
- 1 (7-oz) pkg baked tortilla chips
- ½ (8-oz) pkg shredded pepper-Jack cheese
- 1½ cups sliced romaine lettuce
Instructions
- Preheat oven to 350°F. Sauté bell pepper and onion in hot oil in a nonstick skillet over medium-high heat 5 minutes or until tender, stirring often. Stir in chili powder, cumin, beans, and pico de gallo.
- Arrange chips on a foil-lined baking sheet; top with bell pepper mixture and cheese.
- Bake 5 to 7 minutes or until cheese is melted; top with lettuce just before serving.
