Greek Burgers with Gyro Sauce

Ingredients

  • ½ lb lean ground lamb (or use ground round)
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ lemon
  • ⅓ cup plain Greek yogurt
  • 2 tsp olive-oil mayonnaise
  • 3 Tbsp crumbled feta cheese
  • 2 hamburger buns (preferably whole wheat)
  • 2 lettuce leaves
  • 2 slices tomato

Instructions

  1. Shape lamb into 2 patties; sprinkle with ⅛ tsp each salt and pepper.
  2. Heat a greased grill pan or large nonstick skillet over medium-high heat. Grill burgers 5 to 6 minutes per side or until no longer pink in center.
  3. Meanwhile, grate zest from lemon to equal ½ tsp; squeeze juice to equal 1 tsp.
  4. Combine yogurt, mayonnaise, lemon zest, juice, ⅛ tsp each salt and pepper and cheese; spread mixture on buns.
  5. Serve burgers on buns with lettuce and tomato.

Side Dish Ingredients

  • ½ small organic English cucumber, thinly sliced
  • 3 radishes, sliced
  • 1½ Tbsp white wine vinegar
  • 1 tsp honey
  • 2 tsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Combine cucumber and radishes in a bowl; whisk together vinegar and remaining ingredients.
  2. Pour dressing over cucumber salad; chill 30 minutes.
