Balsamic London Broil
Thyme-Sweet Potato "Noodles"Ingredients
- 1 sweet onion, thinly sliced
- 1 lb London broil
- 2 Tbsp balsamic vinegar
- 1 Tbsp coconut aminos
- 1 Tbsp whole-grain mustard
- 2 cloves garlic, minced
- 1 tsp pepper
- 2 sprigs fresh rosemary
Instructions
- Place onion in a 3- or 4-quart slow cooker. Top with beef, vinegar, coconut aminos, mustard, garlic, pepper, and rosemary.
- Cover and cook on LOW 6 to 8 hours or until beef is very tender. Cool slightly; slice or shred beef.
Side Dish Ingredients
- 2 sweet potatoes
- 1 Tbsp ghee
- ½ Tbsp chopped fresh thyme
Side Dish Instructions
- Cut potatoes into noodles using a spiralizer, or use a vegetable peeler to shave potatoes into long thin ribbons.
- Melt ghee in a large nonstick skillet; add potatoes, and cook 4 to 5 minutes or until tender. Sprinkle with thyme; season with salt and pepper to taste.
