Loaded Cauliflower Casserole

Ingredients

  • 4 slices bacon
  • 1 (12-oz) pkg cauliflower florets
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • ½ Tbsp Ranch dressing mix
  • ⅛ tsp pepper
  • 2 green onions, chopped and divided
  • 1 cup shredded Cheddar-Jack cheese blend

Instructions

  1. Cook bacon in a skillet over medium heat until crisp. Drain and crumble.
  2. Meanwhile, steam cauliflower in microwave according to package directions. Drain, if needed, and cut into bite-size florets.
  3. Preheat oven to 400°F. Combine sour cream, mayonnaise, Ranch mix, and pepper in a large bowl, stirring to combine. Add cauliflower, half of onions, half of bacon, and ¼ cup cheese, mixing well.
  4. Spoon cauliflower into a lightly greased 8-inch baking dish. Bake 13 to 15 minutes or until thoroughly heated. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted and bubbly. Top with remaining onions and bacon.

  • 1 clove garlic, minced
  • 1 Tbsp olive oil
  • ¾ lb asparagus, trimmed
  • ¼ tsp salt

Side Dish Instructions

  1. Cook garlic in hot oil in a large skillet over medium heat 1 minute. Stir in asparagus; cover and cook 2 minutes. Sprinkle with salt.
