Loaded Cauliflower Casserole
Skillet Asparagus
Ingredients
- 4 slices bacon
- 1 (12-oz) pkg cauliflower florets
- ¼ cup sour cream
- ¼ cup mayonnaise
- ½ Tbsp Ranch dressing mix
- ⅛ tsp pepper
- 2 green onions, chopped and divided
- 1 cup shredded Cheddar-Jack cheese blend
Instructions
- Cook bacon in a skillet over medium heat until crisp. Drain and crumble.
- Meanwhile, steam cauliflower in microwave according to package directions. Drain, if needed, and cut into bite-size florets.
- Preheat oven to 400°F. Combine sour cream, mayonnaise, Ranch mix, and pepper in a large bowl, stirring to combine. Add cauliflower, half of onions, half of bacon, and ¼ cup cheese, mixing well.
- Spoon cauliflower into a lightly greased 8-inch baking dish. Bake 13 to 15 minutes or until thoroughly heated. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted and bubbly. Top with remaining onions and bacon.

- 1 clove garlic, minced
- 1 Tbsp olive oil
- ¾ lb asparagus, trimmed
- ¼ tsp salt
Side Dish Instructions
- Cook garlic in hot oil in a large skillet over medium heat 1 minute. Stir in asparagus; cover and cook 2 minutes. Sprinkle with salt.
