Tortilla-Crusted Chicken Nuggets

Honey-Glazed Carrots and Green Beans

Ingredients

  • ½ cup all-purpose flour
  • 1 tsp dried oregano
  • 3 large eggs, lightly beaten
  • 3 cups crushed tortilla chips
  • 1½ lb boneless, skinless chicken breasts, cut into 2-inch chunks

Instructions

  1. Preheat oven to 425°F. Place a greased wire rack on a rimmed baking sheet.
  2. Combine flour and oregano in a shallow bowl. Place eggs in a second shallow bowl; place chips in a third shallow bowl.
  3. Dredge chicken in flour mixture, shaking off excess; dip in eggs, and dredge in chips, pressing gently to adhere. Place on prepared rack; coat with cooking spray.
  4. Bake 18 to 20 minutes or until done.

  • 2 (10-oz) pkg frozen honey-glazed carrots
  • 1 (15-oz) pkg frozen green beans

Side Dish Instructions

  1. Cook carrots and green beans according to package directions. Season green beans with salt and pepper to taste.
