Tortilla-Crusted Chicken Nuggets
Honey-Glazed Carrots and Green BeansIngredients
- ½ cup all-purpose flour
- 1 tsp dried oregano
- 3 large eggs, lightly beaten
- 3 cups crushed tortilla chips
- 1½ lb boneless, skinless chicken breasts, cut into 2-inch chunks
Instructions
- Preheat oven to 425°F. Place a greased wire rack on a rimmed baking sheet.
- Combine flour and oregano in a shallow bowl. Place eggs in a second shallow bowl; place chips in a third shallow bowl.
- Dredge chicken in flour mixture, shaking off excess; dip in eggs, and dredge in chips, pressing gently to adhere. Place on prepared rack; coat with cooking spray.
- Bake 18 to 20 minutes or until done.

- 1 (15-oz) pkg frozen green beans

- Cook carrots and green beans according to package directions. Season green beans with salt and pepper to taste.
