Sweet Glazed Turkey Meat Loaf
Mashed Sweet Potatoes and Steamed Broccoli
Ingredients
- 1 onion, chopped
- 2 Tbsp olive oil
- 1 Tbsp gluten-free Worcestershire sauce
- ¼ cup gluten-free chicken broth
- 1½ lb lean ground turkey
- ½ cup gluten-free panko breadcrumbs
- ¾ tsp salt
- ¾ tsp pepper
- ½ tsp dried rubbed sage
- 2 large eggs, lightly beaten
- ¼ cup maple syrup
- 2 Tbsp Dijon mustard
Instructions
- Preheat oven to 375°F. Cook onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender; cool slightly.
- Gently combine onion, Worcestershire sauce, broth, turkey, panko, salt, pepper, sage, and eggs. Place mixture in a 9- x 5-inch loaf pan.
- Combine syrup and mustard; brush over loaf.
- Bake 50 minutes to 1 hour or until meat is no longer pink.
Side Dish Ingredients
- 3 large sweet potatoes
- 2 Tbsp butter
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 2 (12-oz) pkg broccoli florets
Side Dish Instructions
- Preheat oven to 375°F. Place potatoes on a baking sheet; bake 40 to 50 minutes or until tender.
- Scoop potato pulp into a bowl; add butter and ¼ tsp each salt and pepper. Mash to desired consistency.
- Meanwhile, cook broccoli according to package directions; sprinkle with ¼ tsp each salt and pepper.
