Parmesan Fish Sticks
Baked Potatoes and Steamed Green BeansIngredients
- 2 large eggs
- 1½ cups panko breadcrumbs
- ¾ cup grated Parmesan cheese
- 1 tsp paprika
- 1 tsp dried parsley flakes
- 1½ lb grouper fillets (or use cod)
- 2 Tbsp butter, melted
Instructions
- Preheat oven to 450°F. Lightly beat eggs in a shallow bowl.
- Combine breadcrumbs, cheese, paprika, and parsley flakes in another shallow bowl.
- Cut fish into strips. Dip fish in egg; coat with crumb mixture. Place fish sticks on a lightly greased baking sheet. Drizzle with melted butter.
- Bake 15 minutes or until fish flakes easily.
Side Dish Ingredients
- 6 russet potatoes
- 1 Tbsp olive oil
- 1 Tbsp kosher salt
- ½ cup butter, softened
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 (15-oz) pkg frozen peas
Side Dish Instructions
- Preheat oven to 450°F. Rub potatoes with oil; sprinkle with salt. Place on a foil-lined rimmed baking sheet. Bake 45 minutes or until very tender.
- Split potatoes, and fluff with a fork. Add butter and cheese to potatoes; season with salt and pepper to taste.
- Steam peas according to package directions; season with salt and pepper to taste.
