Parmesan Fish Sticks

Baked Potatoes and Steamed Green Beans

Ingredients

  • 2 large eggs
  • 1½ cups panko breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp dried parsley flakes
  • 1½ lb grouper fillets (or use cod)
  • 2 Tbsp butter, melted

Instructions

  1. Preheat oven to 450°F. Lightly beat eggs in a shallow bowl.
  2. Combine breadcrumbs, cheese, paprika, and parsley flakes in another shallow bowl.
  3. Cut fish into strips. Dip fish in egg; coat with crumb mixture. Place fish sticks on a lightly greased baking sheet. Drizzle with melted butter.
  4. Bake 15 minutes or until fish flakes easily.

Side Dish Ingredients

  • 6 russet potatoes
  • 1 Tbsp olive oil
  • 1 Tbsp kosher salt
  • ½ cup butter, softened
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 1 (15-oz) pkg frozen peas

Side Dish Instructions

  1. Preheat oven to 450°F. Rub potatoes with oil; sprinkle with salt. Place on a foil-lined rimmed baking sheet. Bake 45 minutes or until very tender.
  2. Split potatoes, and fluff with a fork. Add butter and cheese to potatoes; season with salt and pepper to taste.
  3. Steam peas according to package directions; season with salt and pepper to taste.
