Ingredients
- 6 (4-oz) grouper fillets
- 2 Tbsp olive oil
- ½ tsp kosher salt
- ½ tsp pepper
- 6 Tbsp pesto
- 2 lemons, sliced
Instructions
- Preheat oven to 450°F. Brush fish with oil on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Top each fillet with 1 Tbsp pesto and 2 to 3 lemon slices.
- Bake 10 minutes or until fish flakes with a fork.

- 1 (10-oz) pkg whole wheat couscous
- 2 Roma tomatoes, chopped
- ½ cup shredded part-skim mozzarella cheese
- ¼ tsp kosher salt
- ¼ tsp pepper
- 2 (8-oz) pkg thin green beans

- Prepare couscous according to package directions. Stir in tomatoes, cheese, salt, and pepper.
- Steam green beans according to package directions.
