Ingredients

  • 6 (4-oz) grouper fillets
  • 2 Tbsp olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 6 Tbsp pesto
  • 2 lemons, sliced

Instructions

  1. Preheat oven to 450°F. Brush fish with oil on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Top each fillet with 1 Tbsp pesto and 2 to 3 lemon slices.
  2. Bake 10 minutes or until fish flakes with a fork.

  • 1 (10-oz) pkg whole wheat couscous
  • 2 Roma tomatoes, chopped
  • ½ cup shredded part-skim mozzarella cheese
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 2 (8-oz) pkg thin green beans

  1. Prepare couscous according to package directions. Stir in tomatoes, cheese, salt, and pepper.
  2. Steam green beans according to package directions.
