Couscous and Edamame Toss

Ingredients

  • 1 cup whole wheat couscous
  • 1 cup frozen shelled edamame
  • 3 Tbsp fresh orange juice
  • ¼ cup extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (5-oz) pkg baby spinach, coarsely chopped
  • ¼ cup thinly sliced green onions
  • ¼ cup dried cranberries
  • ¼ cup crumbled reduced-fat feta cheese

Instructions

  1. Cook couscous and edamame according to package instructions.
  2. Whisk together orange juice, oil, vinegar, honey, salt, and pepper in a large bowl.
  3. Add couscous, edamame, spinach, onions and cranberries, and toss.
  4. Sprinkle with cheese. Serve warm or chilled.
