Couscous and Edamame Toss

Ingredients
- 1 cup whole wheat couscous
- 1 cup frozen shelled edamame
- 3 Tbsp fresh orange juice
- ¼ cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp honey
- ½ tsp salt
- ½ tsp pepper
- 1 (5-oz) pkg baby spinach, coarsely chopped
- ¼ cup thinly sliced green onions
- ¼ cup dried cranberries
- ¼ cup crumbled reduced-fat feta cheese
Instructions
- Cook couscous and edamame according to package instructions.
- Whisk together orange juice, oil, vinegar, honey, salt, and pepper in a large bowl.
- Add couscous, edamame, spinach, onions and cranberries, and toss.
- Sprinkle with cheese. Serve warm or chilled.
