Basil-Avocado BLT Sandwiches

Ingredients

  • 8 slices center cut bacon
  • 8 (1-oz) slices whole wheat bread, toasted
  • 4 Tbsp reduced-fat mayonnaise
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 1 cup baby arugula
  • ¼ cup fresh basil leaves

Instructions

  1. Cook bacon in a large nonstick skillet until crisp; drain.
  2. Spread one side of each toast slice with mayonnaise; top 4 toast slices with bacon, avocado, tomato, arugula, and basil. Top with remaining toast slices, mayonnaise sides down.
