Ingredients

  • 2 (6-oz) grouper fillets
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup finely chopped pecans
  • ¼ cup panko breadcrumbs
  • 2 tsp olive oil
  • 1 large egg

Instructions

  1. Preheat oven to 400°F. Sprinkle fish with salt and pepper.
  2. Combine nuts, breadcrumbs, and oil in a shallow dish. Beat egg lightly in another shallow dish. Dip fish in egg; dredge in nut mixture, gently pressing to adhere.
  3. Place fish on a lightly greased baking sheet. Bake 10 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • ¼ cup quick-cooking farro
  • 1 small Gala apple, sliced
  • 3 Tbsp dried cranberries
  • 3 Tbsp chopped pecans
  • 2 Tbsp olive oil vinaigrette (or use apple cider vinaigrette)
  • 2 cups spring mix

Side Dish Instructions

  1. Cook farro according to package directions.
  2. Toss together farro, apple, cranberries, nuts, and vinaigrette in a medium bowl. Fold in spring mix or serve farro mixture over spring mix.
