Pecan-Crusted Grouper
Apple and Pecan Farro SaladWine Recommendation

Ingredients
- 2 (6-oz) grouper fillets
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup finely chopped pecans
- ¼ cup panko breadcrumbs
- 2 tsp olive oil
- 1 large egg
Instructions
- Preheat oven to 400°F. Sprinkle fish with salt and pepper.
- Combine nuts, breadcrumbs, and oil in a shallow dish. Beat egg lightly in another shallow dish. Dip fish in egg; dredge in nut mixture, gently pressing to adhere.
- Place fish on a lightly greased baking sheet. Bake 10 minutes or until fish flakes with a fork.
Side Dish Ingredients
- ¼ cup quick-cooking farro
- 1 small Gala apple, sliced
- 3 Tbsp dried cranberries
- 3 Tbsp chopped pecans
- 2 Tbsp olive oil vinaigrette (or use apple cider vinaigrette)
- 2 cups spring mix
Side Dish Instructions
- Cook farro according to package directions.
- Toss together farro, apple, cranberries, nuts, and vinaigrette in a medium bowl. Fold in spring mix or serve farro mixture over spring mix.
