Crispy Sage Chicken

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • ¼ cup panko breadcrumbs
  • ¼ tsp dried rubbed sage
  • 2 Tbsp mayonnaise
  • 1 Tbsp olive oil

Instructions

  1. Sprinkle chicken with salt and pepper, if desired. Combine panko and sage in a shallow bowl. Spread mayonnaise on one side of chicken; dredge coated side in panko mixture.
  2. Cook chicken, coated side down, in hot oil in a skillet over medium heat 5 to 6 minutes or until crisp. Turn and cook 5 to 6 minutes longer or until chicken is done.

Side Dish Ingredients

  • 3 cups spinach
  • 3 Tbsp dried cherries (or use dried cranberries)
  • 3 Tbsp chopped walnuts (or use pecans)
  • 2 Tbsp olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a medium bowl.
