Garlic-Parmesan Shrimp
Lemony Farro SaladIngredients
- 1½ lb peeled and deveined, large raw shrimp
- 3 Tbsp canola oil
- 3 Tbsp minced garlic
- ¾ tsp Italian seasoning
- ¾ cup freshly grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Toss together shrimp, oil, garlic, and Italian seasoning in a bowl. Place shrimp in a single layer on a large baking sheet. Sprinkle with cheese.
- Bake 8 minutes or until shrimp turn pink.
Side Dish Ingredients
- ¾ cup quick-cooking farro or barley
- 1 pint grape tomatoes, halved
- 1 English cucumber, chopped
- 1 (4-oz) log goat cheese, crumbled
- ½ cup chopped fresh parsley
- ½ cup chopped kalamata olives
- ½ cup refrigerated lemon vinaigrette
Side Dish Instructions
- Cook farro according to package directions.
- Toss together farro, tomatoes, cucumber, cheese, parsley, olives, and vinaigrette in a large bowl.
