Garlic-Parmesan Shrimp

Ingredients

  • 1½ lb peeled and deveined, large raw shrimp
  • 3 Tbsp canola oil
  • 3 Tbsp minced garlic
  • ¾ tsp Italian seasoning
  • ¾ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F. Toss together shrimp, oil, garlic, and Italian seasoning in a bowl. Place shrimp in a single layer on a large baking sheet. Sprinkle with cheese.
  2. Bake 8 minutes or until shrimp turn pink.

Side Dish Ingredients

  • ¾ cup quick-cooking farro or barley
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, chopped
  • 1 (4-oz) log goat cheese, crumbled
  • ½ cup chopped fresh parsley
  • ½ cup chopped kalamata olives
  • ½ cup refrigerated lemon vinaigrette

Side Dish Instructions

  1. Cook farro according to package directions.
  2. Toss together farro, tomatoes, cucumber, cheese, parsley, olives, and vinaigrette in a large bowl.
