Sour Cream-Dill Salmon
Roasted Garlic CarrotsIngredients
- 1 lb salmon fillets
- ⅛ tsp salt
- ¼ cup reduced-fat sour cream
- 2 Tbsp reduced-fat mayonnaise
- ½ tsp dried dill
- 2 Tbsp freshly grated Parmesan cheese
Instructions
- Preheat oven to 425°F. Place fish in a greased baking dish; sprinkle with salt.
- Combine sour cream, mayonnaise, and dill. Spread mixture on fish.
- Bake 10 to 12 minutes or until fish flakes with a fork. Remove from oven; sprinkle with cheese.
- Increase oven temperature to broil. Broil 1 minute.

- 1 (16-oz) pkg rainbow carrots
- 1½ Tbsp minced garlic
- 1 Tbsp olive oil
- ½ Tbsp lemon juice
- ⅛ tsp pepper
- 2 Tbsp chopped fresh parsley
Side Dish Instructions
- Preheat oven to 425°F. Cut carrots into 3-inch sticks. Toss carrots, garlic, oil, lemon juice, salt, and pepper on a greased rimmed baking sheet; spread in a single layer.
- Bake 20 to 25 minutes or until tender; toss with parsley.
