Ground Beef Lettuce Wraps
Carrot-Avocado Salad

Ingredients
- ¾ lb ground beef (or use ground turkey)
- ½ tsp salt
- ¼ tsp pepper
- ¼ cup creamy peanut butter
- 1½ Tbsp soy sauce
- 1 Tbsp rice vinegar
- ½ Tbsp minced garlic
- 4 lettuce leaves
- 1 lime, cut into wedges
Instructions
- Cook beef, salt, and pepper in a large skillet over medium-high heat 8 minutes or until browned and crumbly; keep warm.
- Whisk together peanut butter, soy sauce, vinegar, and garlic.
- Divide beef among lettuce leaves; drizzle with peanut sauce. Serve with lime wedges. Top with Carrot-Avocado Salad recipe, or serve it on the side.
Side Dish Ingredients
- 3 Tbsp lime juice
- 2 Tbsp extra virgin olive oil
- ½ tsp salt
- ½ cup shredded carrots
- ½ jicama, peeled and grated
- 1 avocado, chopped
Side Dish Instructions
- Whisk together lime juice, oil, and salt in a bowl. Stir in carrots and jicama. Chill until ready to serve.
- Stir in avocado just before serving.
