Macaroni and Cheese Bowls

Ingredients

  • ½ (24-oz) pkg frozen popcorn chicken
  • ½ (16-oz) pkg elbow macaroni
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • 2 cups milk
  • ½ Tbsp Dijon mustard
  • 1 cup shredded Cheddar cheese
  • 6 slices fully-cooked bacon
  • ½ cup shredded Monterey Jack cheese

Instructions

  1. Cook chicken according to package directions.
  2. Cook macaroni according to package directions; drain and keep warm.
  3. Meanwhile, melt butter in a Dutch oven over medium heat; stir in flour and cook 2 minutes, stirring constantly. Add milk; bring to a boil, reduce heat, and simmer 10 minutes or until thickened, stirring occasionally.
  4. Stir in Cheddar cheese until melted. Stir in macaroni.
  5. Heat bacon in microwave according to package directions; coarsely chop.
  6. Divide macaroni and cheese between 2 bowls. Top with desired amount of chicken, Monterey Jack cheese, and bacon.

  • 1 (1-lb) container fruit salad

Side Dish Instructions

  1. Serve fruit on the side.
