Ingredients

  • 1 lb boneless rump roast, well trimmed
  • ½ organic green bell pepper, thinly sliced
  • ½ onion, thinly sliced
  • 2 cloves garlic, minced
  • ¾ cup unsweetened organic coconut milk
  • 1½ Tbsp red curry paste
  • 1 tsp crushed red pepper
  • ½ (12-oz) pkg broccoli florets

Instructions

  1. Cut roast into 1-inch chunks. Place beef chunks in a 4-quart slow cooker. Top with bell pepper, onion, and garlic.
  2. Add coconut milk, curry paste, and red pepper. Cover and cook on LOW 8 hours.
  3. Stir in broccoli; cover and cook 30 minutes or until broccoli is crisp-tender. Season with black pepper to taste.
  4. Serve over Cilantro Couscous recipe.

Side Dish Ingredients

  • 1 clove garlic, minced
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • ½ cup whole wheat couscous
  • 1 Tbsp chopped fresh cilantro

Side Dish Instructions

  1. Sauté garlic with salt and pepper in hot oil in a saucepan over medium-high heat 1 minute; add couscous and water. Cook according to package directions.
  2. Stir in cilantro just before serving.
