Ingredients

  • 1 (5-oz) pkg seasoned croutons
  • ¼ cup butter, melted
  • 1 cup freshly grated Parmesan cheese, divided
  • 1 (12-oz) pkg broccoli florets
  • 3 cups chopped rotisserie chicken (or chopped cooked turkey)
  • 1 (15-or 16-oz) jar Alfredo sauce
  • 1 cup drained and chopped roasted red peppers
  • ½ cup sour cream

Instructions

  1. Preheat broiler. Toss together croutons and melted butter in a bowl. Stir in ½ cup cheese; set aside.
  2. Microwave broccoli according to package directions; chop large pieces. Heat chicken and Alfredo sauce in a microwave-safe bowl until thoroughly heated. Stir in broccoli, roasted peppers, and ½ cup cheese. Stir in sour cream. Spoon into a greased broiler-proof baking dish. Top with cheesy croutons.
  3. Broil on second oven rack 2 to 3 minutes or until thoroughly heated and browned.

Side Dish Ingredients

  • 2 (9-oz) pkg frozen seasoned Brussels sprouts
  • 1 (12-oz) pkg frozen butternut squash veggie spirals
  • 2 Tbsp butter

Side Dish Instructions

  1. Microwave Brussels sprouts according to package directions.
  2. Microwave veggie spirals according to package directions. Toss with butter in a bowl; season with salt and pepper to taste.
