Ingredients

  • 2 slices center cut bacon, chopped
  • 4 oz whole-grain penne pasta
  • 1 cup shredded rotisserie chicken
  • 2½ tsp Ranch dressing mix
  • 2 oz cream cheese, softened
  • ⅓ cup shredded Cheddar cheese
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp.
  2. Meanwhile, cook pasta according to package directions in a saucepan. Drain, reserving ⅓ cup pasta water. Return pasta to pan.
  3. Add chicken, Ranch mix, bacon, and cream cheese to hot cooked pasta, stirring until cheese melts. Stir in Cheddar until melted, adding pasta water to create a sauce. Sprinkle with parsley.

  • 2 cups spinach
  • ½ cup grape tomatoes
  • 2 Tbsp olive oil vinaigrette

  1. Toss together all ingredients in a bowl.
