Cheesy Ranch-Chicken Pasta

Ingredients
- 2 slices center cut bacon, chopped
- 4 oz whole-grain penne pasta
- 1 cup shredded rotisserie chicken
- 2½ tsp Ranch dressing mix
- 2 oz cream cheese, softened
- ⅓ cup shredded Cheddar cheese
- 2 Tbsp chopped fresh parsley
Instructions
- Cook bacon in a skillet over medium heat 6 to 8 minutes or until crisp.
- Meanwhile, cook pasta according to package directions in a saucepan. Drain, reserving ⅓ cup pasta water. Return pasta to pan.
- Add chicken, Ranch mix, bacon, and cream cheese to hot cooked pasta, stirring until cheese melts. Stir in Cheddar until melted, adding pasta water to create a sauce. Sprinkle with parsley.

- 2 cups spinach
- ½ cup grape tomatoes
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl.
