Garlic Roast Beef with Horseradish Sauce
Creamy Mashed Potatoes and Steamed AsparagusIngredients
- 2 tsp dried thyme
- 1½ tsp pepper, divided
- ½ tsp salt
- 1 (3-lb) eye of round roast
- 5 cloves garlic, minced
- 1 (14.5-oz) can low-sodium beef broth
- 1 (8-oz) carton sour cream
- 2 Tbsp prepared horseradish
Instructions
- Sprinkle thyme, 1 tsp pepper, and salt over roast. Place in a 5- to 7-quart slow cooker. Sprinkle with garlic, and pour broth into cooker.
- Cover and cook on LOW 8 to 10 hours or until beef is tender. Slice beef.
- Stir together sour cream, horseradish, and ½ tsp pepper. Serve with beef.
Side Dish Ingredients
- 1½ lb baking potatoes, peeled and chopped
- ¾ cup low-sodium chicken broth
- 2 Tbsp butter
- ½ tsp salt
- ½ tsp pepper
- 1½ lb asparagus, trimmed
- 2 Tbsp water
- ¾ tsp Italian seasoning
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a saucepan; reduce heat, and simmer 12 minutes or until tender.
- Drain potatoes; stir in broth and butter. Mash to desired consistency; sprinkle with salt and pepper.
- Place asparagus in a microwave-safe dish; add 2 Tbsp water. Cover and microwave on HIGH 3 minutes or until crisp-tender. Drain; sprinkle with seasoning.
