Plantain Chips and Guacamole

Ingredients

  • 1 (9-oz) pkg refrigerated lightly seasoned jackfruit
  • ½ tsp Mojo rub seasoning
  • 3 vegan ciabatta rolls, halved lengthwise
  • 1 Tbsp olive oil
  • 3 Tbsp yellow mustard
  • 3 Tbsp organic dill pickle chips
  • 3 slices Swiss cheese

Instructions

  1. Heat jackfruit according to package directions; stir in seasoning.
  2. Brush outsides of rolls with oil. Spread mustard on cut sides of rolls. Layer roll bottoms with jackfruit, pickles, and cheese. Cover with roll tops.
  3. Cook sandwiches in a large grill pan over medium heat, pressing sandwiches down using a heavy skillet 2 to 3 minutes per side or until toasted and cheese is melted.

  • ⅔ cup guacamole
  • ½ (5-oz) pkg lightly salted plantain chips

Side Dish Instructions

  1. Serve guacamole and plantain chips alongside sandwiches.
