Cuban Panini
Plantain Chips and GuacamoleIngredients
- 1 (9-oz) pkg refrigerated lightly seasoned jackfruit
- ½ tsp Mojo rub seasoning
- 3 vegan ciabatta rolls, halved lengthwise
- 1 Tbsp olive oil
- 3 Tbsp yellow mustard
- 3 Tbsp organic dill pickle chips
- 3 slices Swiss cheese
Instructions
- Heat jackfruit according to package directions; stir in seasoning.
- Brush outsides of rolls with oil. Spread mustard on cut sides of rolls. Layer roll bottoms with jackfruit, pickles, and cheese. Cover with roll tops.
- Cook sandwiches in a large grill pan over medium heat, pressing sandwiches down using a heavy skillet 2 to 3 minutes per side or until toasted and cheese is melted.

- ⅔ cup guacamole
- ½ (5-oz) pkg lightly salted plantain chips
