Lemon-Dill Two-Bean Orzo
Poached Pears
Ingredients
- 1 lb green beans, trimmed and cut into 2-inch pieces
- ½ (16-oz) pkg orzo
- 3 Tbsp fresh lemon juice
- 3 Tbsp olive oil
- 1 Tbsp chopped fresh dill
- ¼ tsp salt
- ¼ tsp pepper
- 1 (15.5-oz) can cannellini beans, drained and rinsed
- ¼ cup thinly sliced red onion
Instructions
- Cook green beans in boiling water to cover in a Dutch oven 3 minutes or until tender. Drain, reserving water in pot. Plunge beans into a bowl of ice-cold water. Let stand 1 to 2 minutes; drain.
- Return reserved water to a boil; add orzo, and cook according to package directions.
- Meanwhile, combine lemon juice, oil, dill, salt, and pepper in a bowl. Add green beans, orzo, cannellini beans, and onion; toss.
Side Dish Ingredients
- 2 pears, peeled, halved, and cored
- 2 cups 100% apple juice
- ¼ tsp ground cinnamon
- ¼ tsp ground ginger
- 2 Tbsp organic sweetened dried cranberries
Side Dish Instructions
- Slice each pear half into 3 wedges. Bring juice, cinnamon, and ginger to a simmer in a saucepan. Add pears; reduce heat to medium, cover and cook 5 minutes or until tender.
- Add cranberries; cook 3 minutes or until cranberries are slightly softened. Cool before serving.
