Cheesy Barbecue Chicken

Mashed Cauliflower and Buttered Green Beans

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 1 cup barbecue sauce
  • 1 (8-oz) pkg shredded colby-Jack cheese
  • 1 (4.5-oz) pkg crumbled bacon

Instructions

  1. Preheat oven to 400°F. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Cook chicken in hot oil in a large nonstick skillet over medium-high heat 3 minutes per side or until browned.
  3. Transfer chicken to a parchment paper-lined rimmed baking sheet, and brush with barbecue sauce. Bake 10 minutes. Sprinkle with cheese and bacon, and bake 3 minutes longer or until cheese melts.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen mashed cauliflower
  • 2 (12-oz) pkg steam-in-bag green beans
  • 3 Tbsp butter, melted

Side Dish Instructions

  1. Cook cauliflower according to package directions.
  2. Steam green beans in a steamer basket over simmering water 10 minutes or until crisp-tender. Drizzle with butter.
