Cheeseburger Baked Potatoes
Sweet Carrots and Sliced ApplesIngredients
- 6 russet potatoes
- 1 Tbsp olive oil
- 1 Tbsp kosher salt
- 1 lb ground beef
- 1 (8-oz) pkg shredded Cheddar cheese
- 1 (8-oz) carton sour cream
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F. Rub potatoes with oil and sprinkle with salt. Place on a lightly greased baking sheet, and bake 1 hour or until tender.
- Slice top one-third off each potato. Scoop out potato pulp into a large bowl, leaving a ¼-inch-thick shell.
- Meanwhile, cook beef in a large skillet over medium heat until browned and crumbly; drain, and add to potato pulp. Add Cheddar cheese, sour cream, onion and garlic powder. Stir until blended. Season with salt and pepper to taste.
- Spoon beef mixture into potato shells. Bake 20 minutes. Sprinkle with Parmesan.

- 1 (16-oz) pkg baby carrots
- 2 Tbsp butter
- 2 Tbsp brown sugar
- 3 Honeycrisp apples, sliced
Side Dish Instructions
- Combine carrots and water to cover in a saucepan; bring to a boil, reduce heat, and simmer 8 minutes.
- Drain carrots, and return to pan. Add butter and brown sugar. Cook, stirring, until butter is melted and sugar is dissolved. Season with salt and pepper to taste.
- Serve apples on each plate.
