Ingredients

  • 2 (6-oz) salmon fillets
  • ½ cup chopped artichoke hearts
  • ¼ cup chopped kalamata olives
  • ¼ cup chopped sun-dried tomatoes in oil
  • 2 Tbsp pesto
  • 1 Tbsp capers
  • 2 Tbsp chopped fresh dill, divided

Instructions

  1. Preheat oven to 450°F. Season fish with salt and pepper on a greased pan. Bake 10 minutes or until fish flakes with a fork.
  2. Meanwhile, cook artichokes, olives, tomatoes, pesto, capers, and 1 Tbsp dill in a skillet over medium-high heat 2 minutes or until thoroughly heated. Serve artichoke mixture on fish. Sprinkle with 1 Tbsp dill.
