Mediterranean Tuna Salad

Ingredients
- 2 (5-oz) cans wild-caught albacore tuna, drained and flaked
- ¼ cup olive-oil mayonnaise
- 1½ Tbsp capers
- 1½ Tbsp fresh lemon juice, divided
- ½ Tbsp Dijon mustard
- 1½ Tbsp olive oil
- ⅛ tsp pepper
- 1 (5-oz) pkg baby spinach
- 2 small Roma tomatoes, cut into wedges
- ½ small red onion, thinly sliced
- ½ English cucumber, thinly sliced
- 2 Tbsp chopped pitted kalamata olives
Instructions
- Stir together tuna, mayonnaise, capers, 1½ tsp lemon juice, and mustard in a medium bowl.
- Whisk together oil, 1 Tbsp lemon juice, and pepper in a separate medium bowl. Add spinach, tomatoes, onion, cucumber, and olives; toss.
- Divide spinach mixture among 3 plates; top with tuna salad.
