Mediterranean Tuna Salad

Ingredients

  • 2 (5-oz) cans wild-caught albacore tuna, drained and flaked
  • ¼ cup olive-oil mayonnaise
  • 1½ Tbsp capers
  • 1½ Tbsp fresh lemon juice, divided
  • ½ Tbsp Dijon mustard
  • 1½ Tbsp olive oil
  • ⅛ tsp pepper
  • 1 (5-oz) pkg baby spinach
  • 2 small Roma tomatoes, cut into wedges
  • ½ small red onion, thinly sliced
  • ½ English cucumber, thinly sliced
  • 2 Tbsp chopped pitted kalamata olives

Instructions

  1. Stir together tuna, mayonnaise, capers, 1½ tsp lemon juice, and mustard in a medium bowl.
  2. Whisk together oil, 1 Tbsp lemon juice, and pepper in a separate medium bowl. Add spinach, tomatoes, onion, cucumber, and olives; toss.
  3. Divide spinach mixture among 3 plates; top with tuna salad.
