Sausage-Vegetable Egg Casserole

Ingredients

  • 1 (14-oz) pkg kielbasa link, cut into ½-inch pieces
  • 1 (8-oz) pkg sliced mushrooms
  • 2 green bell peppers, chopped
  • 1 Tbsp olive oil
  • 12 large eggs
  • ½ tsp garlic powder
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell peppers in hot oil in a 12-inch ovenproof skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
  2. Whisk together eggs, garlic powder, and black pepper in a large bowl. Stir in kielbasa mixture. Pour into skillet.
  3. Bake 20 to 25 minutes or until set and beginning to brown.

Side Dish Ingredients

  • 1 Tbsp lemon juice
  • 1 Tbsp honey
  • 1 (16-oz) pkg strawberries, sliced
  • 2 pears, diced

Side Dish Instructions

  1. Whisk together lemon juice and honey in a bowl. Add strawberries and pears; toss.
