Sausage-Vegetable Egg Casserole
Pear-Strawberry SaladIngredients
- 1 (14-oz) pkg kielbasa link, cut into ½-inch pieces
- 1 (8-oz) pkg sliced mushrooms
- 2 green bell peppers, chopped
- 1 Tbsp olive oil
- 12 large eggs
- ½ tsp garlic powder
- ½ tsp black pepper
Instructions
- Preheat oven to 400°F. Cook kielbasa, mushrooms, and bell peppers in hot oil in a 12-inch ovenproof skillet over medium heat 5 minutes or until kielbasa is browned, stirring often. Remove from skillet.
- Whisk together eggs, garlic powder, and black pepper in a large bowl. Stir in kielbasa mixture. Pour into skillet.
- Bake 20 to 25 minutes or until set and beginning to brown.
Side Dish Ingredients
- 1 Tbsp lemon juice
- 1 Tbsp honey
- 1 (16-oz) pkg strawberries, sliced
- 2 pears, diced
Side Dish Instructions
- Whisk together lemon juice and honey in a bowl. Add strawberries and pears; toss.
