Baked Chicken Taquitos

Ingredients
- 1 onion, diced
- 2 Tbsp olive oil
- 3 cups shredded rotisserie chicken
- 1 (16-oz) jar salsa, divided
- 2 tsp chili powder
- 1 tsp ground cumin
- 12 soft taco-size flour tortillas
- 1 (8-oz) pkg shredded Mexican-blend cheese
- 1 (8-oz) carton sour cream
- 2 green onions, thinly sliced
Instructions
- Preheat oven to 400°F. Cook onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
- Reduce heat to medium; stir in chicken, 1 cup salsa, chili powder, and cumin; cook 6 to 8 minutes or until thickened.
- Spread chicken mixture down middle of each tortilla; sprinkle with cheese. Roll up tortillas, and place, seam sides down, on a large foil-lined baking sheet. Spray tortillas with cooking spray.
- Bake 10 minutes or until golden brown. Stir together sour cream and green onions. Serve taquitos with sour cream mixture and remaining salsa.
