Lemon-Herb Salmon

Romaine, Raspberry, and Feta Salad

Ingredients

  • 6 (6-oz) salmon fillets
  • 2 Tbsp olive oil
  • ½ tsp salt
  • 2 tsp chopped fresh thyme (or use 1 tsp dried)
  • 1 lemon, cut into wedges

Instructions

  1. Preheat broiler with oven rack 6 inches from heat. Arrange fish on a foil-lined baking sheet; brush with oil, and sprinkle with salt and desired amount of pepper.
  2. Broil 5 to 7 minutes or until fish flakes with a fork.
  3. Sprinkle with thyme. Serve fish with lemon wedges.

  • 6 cups torn romaine lettuce
  • 1 pint raspberries
  • 1 cup sliced almonds
  • ½ cup crumbled feta cheese
  • ½ cup thinly sliced red onion
  • ½ cup refrigerated balsamic vinaigrette
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Toss together ingredients in a large bowl.
