Sweet Potato Casserole

Ingredients
- 5 lb sweet potatoes
- ½ cup sugar
- ½ cup milk
- ¾ cup butter, melted and divided
- 3 large eggs, beaten
- ½ tsp salt
- 1½ cups lightly crushed cornflakes cereal
- ½ cup packed brown sugar
- ½ cup all-purpose flour
- 2 cups miniature marshmallows
Instructions
- Preheat oven to 400°F. Place sweet potatoes on a rimmed baking sheet; bake 40 to 50 minutes or until potatoes are fork-tender.
- Let stand until cool enough to handle; peel potatoes, and place potato pulp in a large bowl. Add sugar, milk, ½ cup melted butter, eggs, and salt.
- Beat at medium speed with an electric mixer until smooth. Spoon into a lightly greased 13- x 9-inch baking dish.
- Stir together crushed cornflakes, brown sugar, flour, and ¼ cup melted butter; sprinkle over casserole. Bake 30 to 40 minutes or until golden brown.
- Sprinkle with marshmallows; bake 5 to 10 minutes longer or until marshmallows are toasted.
