Ingredients

  • 5 lb sweet potatoes
  • ½ cup sugar
  • ½ cup milk
  • ¾ cup butter, melted and divided
  • 3 large eggs, beaten
  • ½ tsp salt
  • 1½ cups lightly crushed cornflakes cereal
  • ½ cup packed brown sugar
  • ½ cup all-purpose flour
  • 2 cups miniature marshmallows

Instructions

  1. Preheat oven to 400°F. Place sweet potatoes on a rimmed baking sheet; bake 40 to 50 minutes or until potatoes are fork-tender.
  2. Let stand until cool enough to handle; peel potatoes, and place potato pulp in a large bowl. Add sugar, milk, ½ cup melted butter, eggs, and salt.
  3. Beat at medium speed with an electric mixer until smooth. Spoon into a lightly greased 13- x 9-inch baking dish.
  4. Stir together crushed cornflakes, brown sugar, flour, and ¼ cup melted butter; sprinkle over casserole. Bake 30 to 40 minutes or until golden brown.
  5. Sprinkle with marshmallows; bake 5 to 10 minutes longer or until marshmallows are toasted.
