Honey-Sesame Pork Tenderloin

Ingredients

  • 1 lb pork tenderloin, trimmed
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup honey
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp sesame oil
  • ½ Tbsp minced garlic
  • 1½ Tbsp sesame seeds

Instructions

  1. Preheat oven to 425°F. Place pork on a greased rimmed baking sheet; sprinkle with salt and pepper. Bake 20 to 22 minutes or until a meat thermometer inserted reads 145°F. Let stand 3 minutes before slicing.
  2. Meanwhile, bring honey, soy sauce, oil, garlic, and sesame seeds to a boil in a small saucepan; cook 3 to 4 minutes or until thickened. Serve sauce with pork.

Side Dish Ingredients

  • ¾ cup instant brown rice
  • ½ (20-oz) pkg frozen sugar snap pea stir-fry vegetables (sugar snap peas, broccoli, green beans, yellow squash, red peppers, carrots, yellow peppers, and water chestnuts)
  • 1 Tbsp olive oil
  • 1 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook vegetables in hot oil in a large skillet over medium-high heat 7 to 10 minutes or until lightly browned and tender. Stir in soy sauce.
