Honey-Sesame Pork Tenderloin
Mixed Vegetables and Brown RiceIngredients
- 1 lb pork tenderloin, trimmed
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup honey
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp sesame oil
- ½ Tbsp minced garlic
- 1½ Tbsp sesame seeds
Instructions
- Preheat oven to 425°F. Place pork on a greased rimmed baking sheet; sprinkle with salt and pepper. Bake 20 to 22 minutes or until a meat thermometer inserted reads 145°F. Let stand 3 minutes before slicing.
- Meanwhile, bring honey, soy sauce, oil, garlic, and sesame seeds to a boil in a small saucepan; cook 3 to 4 minutes or until thickened. Serve sauce with pork.

- ¾ cup instant brown rice
- ½ (20-oz) pkg frozen sugar snap pea stir-fry vegetables (sugar snap peas, broccoli, green beans, yellow squash, red peppers, carrots, yellow peppers, and water chestnuts)
- 1 Tbsp olive oil
- 1 Tbsp low-sodium soy sauce
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, cook vegetables in hot oil in a large skillet over medium-high heat 7 to 10 minutes or until lightly browned and tender. Stir in soy sauce.
