Peanut Shrimp Stir-Fry

Ingredients
- 3 oz rice noodles
- 2 cups frozen broccoli and vegetable stir-fry
- 1 Tbsp olive oil, divided
- ½ lb peeled and deveined, large raw shrimp
- ⅛ tsp garlic powder
- ½ cup peanut sauce
- 3 Tbsp chopped roasted, salted peanuts
- 1 green onion, thinly sliced
Instructions
- Cook rice noodles according to package directions.
- Meanwhile, cook vegetables in ½ Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until tender.
- Sprinkle shrimp with garlic powder. Cook shrimp in ½ Tbsp hot oil in another skillet over medium-high heat 2 to 3 minutes per side or until shrimp turn pink.
- Add shrimp to vegetables; stir in peanut sauce; cook 3 minutes or until thoroughly heated, stirring to coat.
- Serve shrimp mixture over rice noodles. Sprinkle with nuts and onion.
