Ingredients

  • 3 oz rice noodles
  • 2 cups frozen broccoli and vegetable stir-fry
  • 1 Tbsp olive oil, divided
  • ½ lb peeled and deveined, large raw shrimp
  • ⅛ tsp garlic powder
  • ½ cup peanut sauce
  • 3 Tbsp chopped roasted, salted peanuts
  • 1 green onion, thinly sliced

Instructions

  1. Cook rice noodles according to package directions.
  2. Meanwhile, cook vegetables in ½ Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until tender.
  3. Sprinkle shrimp with garlic powder. Cook shrimp in ½ Tbsp hot oil in another skillet over medium-high heat 2 to 3 minutes per side or until shrimp turn pink.
  4. Add shrimp to vegetables; stir in peanut sauce; cook 3 minutes or until thoroughly heated, stirring to coat.
  5. Serve shrimp mixture over rice noodles. Sprinkle with nuts and onion.
