Slow-Cooked Pulled Pork Sandwiches

Ingredients

  • 2 lb pork loin roast, trimmed
  • 1 Tbsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 2 sweet onions, sliced
  • 1 cup organic apple juice
  • 1 (12-oz) can BPA-free organic tomato sauce
  • 2 Tbsp unsulphured molasses
  • 6 hamburger buns (preferably whole wheat)

Instructions

  1. Place pork in a 4-to 6-quart slow cooker; sprinkle with chili powder, salt, and pepper. Top with onions, apple juice, tomato sauce, and molasses.
  2. Cover and cook on LOW 4 to 6 hours or until tender.
  3. Shred pork with 2 forks. Serve pork on buns with sauce from cooker, if desired.

Side Dish Ingredients

  • ½ lb green beans, trimmed
  • 1 lb organic red potatoes, halved
  • 6 cups baby arugula
  • 2 Tbsp fresh lemon juice
  • 2 tsp dried dill
  • 2 tsp grainy Dijon mustard
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Cut green beans in half. Place potatoes in a saucepan, and add water to cover; bring to a boil. Cook 12 minutes or until potatoes are almost tender.
  2. Add green beans, and cook 3 minutes or until potatoes and green beans are tender. Drain and transfer to a bowl; add arugula.
  3. Whisk together lemon juice, dill, mustard, salt, and pepper until blended; gradually whisk in oil.
  4. Pour dressing over potatoes and green beans; toss.
