Slow-Cooked Pulled Pork Sandwiches

Ingredients
- 2 lb pork loin roast, trimmed
- 1 Tbsp chili powder
- ½ tsp salt
- ½ tsp pepper
- 2 sweet onions, sliced
- 1 cup organic apple juice
- 1 (12-oz) can BPA-free organic tomato sauce
- 2 Tbsp unsulphured molasses
- 6 hamburger buns (preferably whole wheat)
Instructions
- Place pork in a 4-to 6-quart slow cooker; sprinkle with chili powder, salt, and pepper. Top with onions, apple juice, tomato sauce, and molasses.
- Cover and cook on LOW 4 to 6 hours or until tender.
- Shred pork with 2 forks. Serve pork on buns with sauce from cooker, if desired.
Side Dish Ingredients
- ½ lb green beans, trimmed
- 1 lb organic red potatoes, halved
- 6 cups baby arugula
- 2 Tbsp fresh lemon juice
- 2 tsp dried dill
- 2 tsp grainy Dijon mustard
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
Side Dish Instructions
- Cut green beans in half. Place potatoes in a saucepan, and add water to cover; bring to a boil. Cook 12 minutes or until potatoes are almost tender.
- Add green beans, and cook 3 minutes or until potatoes and green beans are tender. Drain and transfer to a bowl; add arugula.
- Whisk together lemon juice, dill, mustard, salt, and pepper until blended; gradually whisk in oil.
- Pour dressing over potatoes and green beans; toss.
