Cheesy Rigatoni Bake

Ingredients

  • ½ (16-oz) pkg rigatoni
  • 2 Tbsp butter
  • 2 Tbsp all-purpose flour
  • ½ tsp salt
  • 1 cup milk
  • 1 large egg, lightly beaten
  • ½ (24-oz) jar marinara sauce
  • 1 cup shredded mozzarella cheese, divided

Instructions

  1. Preheat oven to 375°F. Cook pasta according to package directions; drain.
  2. Meanwhile, melt butter in a saucepan; whisk in flour and salt. Cook, stirring constantly, 2 minutes. Gradually add milk, stirring until smooth. Cook, stirring occasionally, until thickened and bubbly. Gradually add beaten egg, whisking constantly.
  3. Place half of pasta in a lightly greased 9-inch baking dish. Top with marinara sauce, ½ cup cheese, remaining pasta, white sauce, and ½ cup cheese.
  4. Bake 30 minutes or until browned and bubbly.

Side Dish Ingredients

  • 1 crown broccoli, cut into florets
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 375°F. Toss together broccoli and oil on a lightly greased rimmed baking sheet.
  2. Bake 20 minutes or until crisp-tender. Season with salt and pepper to taste.
