Green Chile Chicken

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 Tbsp olive oil
  • ½ small onion, diced
  • 1 (4-oz) can mild diced green chiles
  • ⅓ cup low-sodium chicken broth
  • 1 Tbsp lime juice
  • ⅓ cup crumbled queso fresco
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a cast-iron or ovenproof skillet over medium-high heat 4 minutes per side or until browned. Remove chicken, reserving drippings in skillet.
  2. Cook onion in same skillet over medium-high heat 6 minutes or until lightly browned and tender. Add chiles, broth, lime juice, and chicken to skillet. Transfer skillet to oven. Bake 10 to 15 minutes or until chicken is done. Sprinkle with cheese and cilantro.

  • 2 Tbsp chopped fresh cilantro

  1. Sprinkle corn with salt and pepper. Cook corn in hot oil in a small skillet over medium-high heat 8 minutes or until browned. Stir in cilantro.
