Mom's Meat Loaf
Petite Green Peas with ShallotsIngredients
- 1 lb lean ground beef
- ⅓ cup chopped onion
- ¼ cup quick-cooking oats
- ¼ cup chopped green bell pepper
- ¾ tsp Worcestershire sauce
- ½ tsp dried thyme
- ¼ tsp salt, divided
- 1 large egg, lightly beaten
- ½ Tbsp butter
- 1 Tbsp all-purpose flour
- ½ cup low-sodium beef broth
Instructions
- Preheat oven to 350°F. Combine beef, onion, oats, bell pepper, Worcestershire sauce, thyme, ⅛ tsp salt, and egg in a large bowl. Shape mixture into an oval-shaped loaf in a lightly greased 9- x 5-inch loaf pan.
- Bake 40 to 45 minutes or until a meat thermometer inserted in center reads 165°F.
- Meanwhile, melt butter in a small saucepan over low heat. Sprinkle with flour; cook 1 minute or until blended. Gradually whisk in broth and ⅛ tsp salt; cook 2 to 3 minutes or until smooth and thickened, stirring constantly.
- Let meat loaf stand 10 minutes before slicing; serve with gravy.

- 1 small shallot, finely chopped
- 1½ tsp olive oil
- ½ (16-oz) pkg frozen petite peas
- ¼ cup low-sodium beef broth
- ¼ tsp salt
- ⅛ tsp pepper
- 2 tsp chopped fresh basil
Side Dish Instructions
- Sauté shallot in hot oil in a saucepan over medium heat 1 minute or until tender.
- Add peas, broth, salt, and pepper to pan; cover and simmer 5 minutes or until peas are tender.
- Stir in basil just before serving.
