Mom's Meat Loaf

Petite Green Peas with Shallots

Ingredients

  • 1 lb lean ground beef
  • ⅓ cup chopped onion
  • ¼ cup quick-cooking oats
  • ¼ cup chopped green bell pepper
  • ¾ tsp Worcestershire sauce
  • ½ tsp dried thyme
  • ¼ tsp salt, divided 
  • 1 large egg, lightly beaten
  • ½ Tbsp butter 
  • 1 Tbsp all-purpose flour
  • ½ cup low-sodium beef broth 

Instructions

  1. Preheat oven to 350°F. Combine beef, onion, oats, bell pepper, Worcestershire sauce, thyme, ⅛ tsp salt, and egg in a large bowl. Shape mixture into an oval-shaped loaf in a lightly greased 9- x 5-inch loaf pan.
  2. Bake 40 to 45 minutes or until a meat thermometer inserted in center reads 165°F.
  3. Meanwhile, melt butter in a small saucepan over low heat. Sprinkle with flour; cook 1 minute or until blended. Gradually whisk in broth and ⅛ tsp salt; cook 2 to 3 minutes or until smooth and thickened, stirring constantly.
  4. Let meat loaf stand 10 minutes before slicing; serve with gravy.

  • 1 small shallot, finely chopped
  • 1½ tsp olive oil
  • ½ (16-oz) pkg frozen petite peas
  • ¼ cup low-sodium beef broth
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 tsp chopped fresh basil 

Side Dish Instructions

  1. Sauté shallot in hot oil in a saucepan over medium heat 1 minute or until tender.
  2. Add peas, broth, salt, and pepper to pan; cover and simmer 5 minutes or until peas are tender.
  3. Stir in basil just before serving.
