Squash and Goat Cheese Pasta

Ingredients
- 6 oz whole-grain rotini pasta
- 3 Tbsp butter
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 2 cloves garlic, minced
- ¼ tsp salt
- ¼ tsp pepper
- ⅔ cup crumbled goat cheese
- 2 Tbsp chopped fresh basil
Instructions
- Cook pasta according to package directions, reserving ¼ cup pasta water.
- Meanwhile, melt butter in a large skillet over medium heat. Cook 3 minutes, whisking constantly, until butter browns and smells nutty.
- Add zucchini, yellow squash, garlic, salt, and pepper to skillet; cook 6 minutes or until lightly browned and tender, stirring often.
- Stir in pasta, cheese, and ¼ cup pasta water, if needed, to skillet; toss to coat. Sprinkle with basil.
