Philly Cheesesteak Skillet
Easy Mashed PotatoesIngredients
- ¾ lb flank steak
- ¼ tsp salt
- ¼ tsp pepper
- 1½ Tbsp olive oil, divided
- 1 onion, sliced
- 1 red or green bell pepper, sliced
- 4 slices provolone cheese
Instructions
- Preheat broiler. Sprinkle steak with salt and pepper. Cook in ½ Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
- Meanwhile, cook onion and bell pepper in 1 Tbsp hot oil in a large ovenproof skillet over medium-high heat 8 minutes or until tender.
- Add steak to vegetables, stirring to blend. Top with cheese. Broil 2 to 3 minutes or until melted.
Side Dish Ingredients
- ¾ lb small red potatoes, halved
- ¼ cup half-and-half
- 1 Tbsp butter
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
- 3 Tbsp sliced green onions
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
- Stir in half-and-half, butter, garlic powder, salt, and pepper. Mash with a potato masher to desired smoothness. Sprinkle with onions.
