Philly Cheesesteak Skillet

Easy Mashed Potatoes

Ingredients

  • ¾ lb flank steak
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1½ Tbsp olive oil, divided
  • 1 onion, sliced
  • 1 red or green bell pepper, sliced
  • 4 slices provolone cheese

Instructions

  1. Preheat broiler. Sprinkle steak with salt and pepper. Cook in ½ Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
  2. Meanwhile, cook onion and bell pepper in 1 Tbsp hot oil in a large ovenproof skillet over medium-high heat 8 minutes or until tender.
  3. Add steak to vegetables, stirring to blend. Top with cheese. Broil 2 to 3 minutes or until melted.

Side Dish Ingredients

  • ¾ lb small red potatoes, halved
  • ¼ cup half-and-half
  • 1 Tbsp butter
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp sliced green onions

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a medium saucepan. Cook 12 to 14 minutes or until tender; drain.
  2. Stir in half-and-half, butter, garlic powder, salt, and pepper. Mash with a potato masher to desired smoothness. Sprinkle with onions.
