Greek Turkey Burgers with Goat Cheese Tzatziki

Ingredients

  • ½ lemon
  • ¼ cup whole milk plain Greek yogurt
  • 1 oz goat cheese, softened
  • ¼ cup finely chopped English cucumber
  • 1½ Tbsp chopped fresh dill
  • 1 clove garlic, crushed
  • ¼ tsp pepper
  • ½ lb ground turkey
  • 2 Tbsp finely chopped red onion
  • ½ tsp Greek seasoning
  • 2 Bibb lettuce leaves
  • ¼ cup roasted red peppers

Instructions

  1. Grate zest and squeeze juice from lemon. Whisk together lemon zest, lemon juice, yogurt, cheese, cucumber, dill, garlic, and pepper in a small bowl. Chill until ready to serve.
  2. Combine turkey, onion, and seasoning in a bowl; shape into 2 patties. Lightly coat both sides of patties with cooking spray.
  3. Cook patties in a nonstick skillet over medium-high heat 5 to 7 minutes per side or until no longer pink in centers.
  4. Serve burgers in lettuce leaves topped with roasted peppers and tzatziki.

  • 1½ Tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • ¾ tsp sugar
  • ½ tsp Dijon mustard
  • ½ tsp dried oregano
  • 1 small clove garlic, crushed
  • ⅛ tsp kosher salt
  • 1 English cucumber, cut into half-moons
  • 1 (4.4-oz) piece naan (preferably whole-grain)

Side Dish Instructions

  1. Whisk together oil, vinegar, sugar, mustard, oregano, garlic, and salt in a bowl. Add cucumber; toss.
  2. Heat naan according to package directions. Cut into wedges.
